Low-Carb Mexican Lasagna

Ingredients:

2 lbs ground beef

1 jar chunky salsa

1 package taco seasoning

6 low carb flour tortillas

1 can pinto beans, rinsed

1 package shredded Mexican cheese

Directions:

Heat oven to 400F.

Brown the ground beef, drain. Stir in salsa and taco seasoning. Simmer on low for 10 mins.

Spread 1/3 of the ground beef on the bottom of a greased baking dish. Cover with 2 tortillas.

Add another layer of beef, half the beans, 1/2 the cheese, 2 tortillas, and repeat. Top with cheese.

Cover with foil and bake for 30 mins. Remove foil and bake for another 5 mins.

Serve with guacamole, salsa, and sour cream.

Note: for an even lower carb option, omit pinto beans and replace with sautéed fajita veggies like peppers and onions.
