Lower Carb Hamburger Helper

Ingredients:
2 tablespoons olive oil
1 medium yellow onion, chopped
1 pound lean ground beef or ground turkey
Salt & pepper
1 tsp paprika
1 tsp garlic powder
1 tsp chili powder
1 lb low carb noodles (I used Carbe Diem)
2 cups low sodium beef broth
1 cup grated or riced zucchini, broccoli, or cauliflower (optional)
1.5 cups milk (unsweetened, unflavored nut milk can be used if preferred)
1.5 cups shredded cheddar cheese
1 Tbsp ketchup
Here’s what to do:
1️⃣ In a large pot cook olive oil, onion and beef on medium high heat. Season with salt and pepper. Break up the meat and cook until brown. Stir in the spices and cook another minute.
2️⃣ Add the pasta and optional vegetable and toss to coat. Pour in broth and milk. Add the ketchup. Stir to combine.
3️⃣ Bring to a gentle boil over medium high heat. Simmer until pasta is al dente (about 8-10 mins). Stir often.
4️⃣ Stir in cheese and cook another few minutes.
