Baked Feta Spaghetti Squash
This recipe is delicious and not difficult to make. Pair it with protein for a complete meal. Check out the video here.
INGREDIENTS
1 large spaghetti squash
Avocado or olive oil spray
Feta cheese (about 12 oz)
Garlic, minced (2 big cloves)
1 container cherry tomatoes, halved
Olive oil
Salt & pepper
Oregano
Fresh basil
DIRECTIONS
1. Preheat oven to 400F. Cut squash in half lengthwise and scoop out seeds. Spray each half with oil.
2. Add feta, garlic, and tomatoes.
3. Drizzle with olive oil and top with salt, pepper, and oregano.
4. Bake at 400F for one hour.
5. Let cool slightly and use a fork to scoop the squash mixture out of the shells and into a bowl.
6. Top with fresh basil and enjoy.
