Egg Roll in a Bowl

Unlike traditional egg roll in a bowl recipes, which are made with coleslaw, I made mine with broccoli slaw, πŸ₯¦ and I like it even better! This recipe continues to be one of my all time favorites. It’s easy, flavorful, healthy, and makes great leftovers.πŸ‘ŒπŸ» Check out the recipe video here.

INGREDIENTS

1 pound ground turkey, chicken, or pork

1 medium onion, chopped

2 tsp fresh ginger, grated

3 cloves garlic, minced

16 ounces broccoli slaw (or cole slaw)

3 Tbsp coconut aminos or soy sauce

1 tsp sesame oil

Sesame seeds

DIRECTIONS

  1. Cook onion in 2 Tbsp avocado oil over medium head until translucent. Add ground turkey and cook through.

  2. Stir in ginger and garlic and cook an additional 2 minutes.

  3. Stir in broccoli slaw and cook for 4-5 minutes. Add coconut aminos and sesame oil and cook until tender.

  4. Top with sesame seeds.
