Spaghetti Squash Casserole

INGREDIENTS

πŸŒ• 1 large or 2 small spaghetti squash

πŸ’« 2 Tbsp olive oil or avocado oil

πŸ§… 1 medium onion, chopped

🌢️ 1 red bell pepper, chopped

πŸ₯• 3 large carrots, chopped

🀎 1 Tbsp cumin

πŸ§„ 1 tsp garlic powder

❀️‍πŸ”₯ 1 tsp chili powder

❀️ 1 tsp paprika

πŸ… 1 16 oz jar salsa

πŸ“ 1 package chicken sausage, fully cooked (could also use ground turkey or chicken)

πŸ₯š 3 eggs, slightly beaten

πŸ§€ 1 cup shredded cheese (optional)

πŸ₯‘ Toppings for serving (e.g. guacamole, avocado, sour cream, tortilla chips)

DIRECTIONS

βœ”οΈ Preheat oven to 350F.

βœ”οΈ Rinse spaghetti squash, stab with a knife for ventilation, and microwave until soft to touch (about 5-8 mins).

βœ”οΈ SautΓ© onion, pepper, and carrots in oil on medium heat for 3-5 mins, add spices and 1 cup salsa and cook for another 3-5 mins.

βœ”οΈ Cut cooked spaghetti squash in half to cool, remove seeds, and scrape out squash with a fork.

βœ”οΈ Add squash, vegetable mixture, and eggs to a 9x12” baking dish, and store to combine.

βœ”οΈ Top with cheese (optional), and bake for 40 mins.
