Spaghetti Squash Casserole

INGREDIENTS
π 1 large or 2 small spaghetti squash
π« 2 Tbsp olive oil or avocado oil
π§ 1 medium onion, chopped
πΆοΈ 1 red bell pepper, chopped
π₯ 3 large carrots, chopped
π€ 1 Tbsp cumin
π§ 1 tsp garlic powder
β€οΈβπ₯ 1 tsp chili powder
β€οΈ 1 tsp paprika
π 1 16 oz jar salsa
π 1 package chicken sausage, fully cooked (could also use ground turkey or chicken)
π₯ 3 eggs, slightly beaten
π§ 1 cup shredded cheese (optional)
π₯ Toppings for serving (e.g. guacamole, avocado, sour cream, tortilla chips)
DIRECTIONS
βοΈ Preheat oven to 350F.
βοΈ Rinse spaghetti squash, stab with a knife for ventilation, and microwave until soft to touch (about 5-8 mins).
βοΈ SautΓ© onion, pepper, and carrots in oil on medium heat for 3-5 mins, add spices and 1 cup salsa and cook for another 3-5 mins.
βοΈ Cut cooked spaghetti squash in half to cool, remove seeds, and scrape out squash with a fork.
βοΈ Add squash, vegetable mixture, and eggs to a 9x12β baking dish, and store to combine.
βοΈ Top with cheese (optional), and bake for 40 mins.
