Protein Pancakes

INGREDIENTS:

1/2 cup oats

1/2 cup cottage cheese

1 teaspoon vanilla extract

4 egg whites

DIRECTIONS:

1. Combine ingredients in a blender.

2. Spray skillet with cooking spray and cook just like "silver dollar" pancakes, a few small pancakes at a time.

TIP:

Double recipe and freeze in portions for a quick high-protein breakfast or snack. Pair with Greek yogurt, cottage cheese, or 2-3 ounces lean protein like chicken sausage, turkey sausage, or Canadian bacon as a meal.
