Pumpkin Turkey Chili

Is it pumpkin season yet!? This pumpkin turkey chili recipe is simple to make and ready in 30 mins.

INGREDIENTS:

1 tablespoon olive oil

1 cup chopped onion

1/2 cup chopped red bell pepper

1/2 cup chopped yellow bell pepper

1 clove garlic, minced

1 pound ground turkey

1 (14.5 ounce) can diced tomatoes

1 (14.5 ounce) can pumpkin puree

1 1/2 tablespoons chili powder

1/2 teaspoon ground black pepper

1 dash salt

Toppings: shredded cheese, plain Greek yogurt, sliced avocado, basil seeds

DIRECTIONS:

Heat the oil in a large pot or skillet over medium heat, and saute the onion, red bell pepper, yellow bell pepper, and garlic until tender. Stir in the turkey, and cook until evenly brown. Mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. Reduce heat to low, cover, and simmer for 20 minutes. Serve topped with cheese, Greek yogurt, and avocado.

Pro tip: Double the recipe and freeze the leftovers for dinner another night.
